What is the difference between Japanese noodles and Italian Style pastas?

The basic difference is that Japanese noodles are kneaded, then rolled, cut and slowly
Air-dried.

Italian pasta is mixed, extruded, cut into shape then hot-dried.
These processes result in a different texture and require a different cooking process.

Your noodles are usually served hot, but I have read that some types can be served cold. Can you explain?
In Asia / Japan cold noodles in summer are a must. They can be served on a bed of ice or placed in the refrigerator and eaten with a dipping sauce or salad.
