What is the difference between Japanese Green Tea
and other green teas?

All (non- herb) tea comes from the same plant. It is said that
tea was brought from China to Japan by Buddhist monks as a medicinal
beverage.
The way Japanese green tea differs from other green teas is in
the process after
The leaves have been picked.
Soil and climate conditions vary from country to country and how
is process once it is picked.
The Japanese do approximately three pickings and then various gradins.
Small leaves picked in early spring are prized for their energy
and flavour. Later season leaves do not command the same price or
demand.

What are the health properties of tea? |

Can you please explain the difference between Kukicha, Hojicha, Genmai Cha and Sencha?

Firstly remember; " CHA" means tea in Japanese:
- Kukicha is made from the twig of the tea bush. The twigs are
sorted and roasted in Iron cauldrons. The result is a unique flavoured
tea that is low in caffeine.
- Sencha is Green Tea. Green tea comes in many grades; specialist
graders are used to sort the teas from the various plantations.
Sencha is often considered 'guest tea' because one only serves
guests good quality.
- Hojicha is roasted green tea. Selected leaves are lightly roasted
giving a deep almost smokey flavour. Hojicha makes a pleasant summer
tea when served cold.
- Genmai cha is Green tea with roasted brown rice. The appearance
of the popped rice against the Green tea gives an interesting
appearance. Genmaicha may be served hot or cold and has slightly
nutty flavour.
