SPECIAL PUMPKIN SOUP
Ingredients
1 Japanese pumpkin (removes skin and chop in chunks)
1 onion chopped
Spiral Dark sesame oil
Mirin
Tamari
1 teaspoon cumin
½ teaspoon coriander
½ teaspoon cinnamon
4 tablespoons genmai (brown rice) miso
Approximately 1 lt of water
Saute onion with sesame oil in a large bowl pot and season generously with mirin and tamari. Add pumpkin and stir well to mix with seasonings. Simmer 5 mins. Pour enough water into pot to make up the number of servings you require (based on 1 cup per person). Add cumin, coriander and cinnamon. Mix well. Let simmer until pumpkin turns soft. Add diluted miso and stir for several mins. Let cool.
Puree.

Reheat and serve
