MOCHA MOUSSE
Ingredients
Serve in tall parfait or wineglasses and top with roasted almonds, walnuts or fresh strawberries for an elegant, yet natural dessert.
3 tablespoons Spiral Agar-Agar flakes or
(1 ½ Spiral Agar-Agar bars)
2/3 cup apple juice
2 cups Bonsoy
2 carob tablespoons
1/8 tablespoon sea salt
4 teaspoon grain coffee
1 teaspoon vanilla
5 tablespoons Spiral barley malt
3 tablespoons Spiral tahini, sesame puree

Roasted almonds, walnuts or fresh fruit for garnish
Dissolve agar- agar in apple juice by simmering in a small saucepan for 5-8
Minutes, stirring frequently. When completely dissolved, add Bonsoy, Carob, Coffee, Vanilla, and sweetener. Mix well and simmer for 2 minutes.
Turn heat off. Add Tahini. Mix until dissolved. Pour in to bowl and refrigerate for one hour or until set. When completely set; mix in a food processor for 1-2 minutes until smooth.
Pour into glasses. Chill 30 minutes to 1 hour. Top with nuts or fruit before serving.
