TOFU- WATTERCRESS SOUP
Ingredients
1 bunch of watercress
1 strip of kombu
1/2 block of tofu
Seasalt
Shoyu/ miso
Spring onions
5 cups of water
This is a simple soup, but nonetheless attractive, flavourful and nutritious.
Prepare Kombu stock. Add salt to stock, bring to a boil, add tofu, and simmer gently. for five minutes. Add shoyu and simmer for two minutes more. Add watercress for last minute of cooking. If using miso rather than shoyu, dilute the miso in a little broth and add to soup just before serving. Garnish with scallion and serve immediately. Three serves.
